Fail Proof Gf/V Sugar Cookies; You'll Love How Simple

GF/V Sugar Cookies


These gluten-free, vegan sugar cookies are super simple to make.  This recipe is also perfect for those in need of a cookie with no butter, oil or nuts.  If you are looking to keep them on the healthier side maybe try them without icing?  I still think they look really cute!  These cookies require no dough chilling time and do not spread out while baking in the oven.   Hooray for super delicious sugar cookies! TIP:  For better rolling results I use a previously frozen, thawed banana


Let's Bake

1.  Add all of the dry ingredients to a mixing bowl.  I like to use GF Robin hood All-Purpose.

2.  Then incorporate all the wet ingredients in a separate bowl, mashing the previously frozen banana and blending until no lumps.

3.  Mix the wet and dry together.  As you stir the dough should come together nicely.  Use hands to feel the dough consistency.  It should come together nicely, not too dry or sticky.

4.  Sprinkle a small amount of gf flour on your rolling surface.

5.  Roll out the dough to about 1/4 inch thickness and use cookie-cutters.

6.  Arrange on baking sheet.  For oil-free baking I use silicone mats that require no spray.

7. Bake gluten-free, vegan sugar cookies for 8 minutes at 350.

8.  Let cool.  Enjoy!  When you are using cookie cutters like these ones you don't need to decorate them with icing.  I think they look really cute plain too.

Tips for Gf/V Easter Cookie Dough

What if my dough is too sticky?

Make sure to measure correctly but if dough becomes too sticky I would try sprinkling gf flour onto the dough or counter surface as you roll.

What if my dough is too dry?

If the dough is too dry add, a small amount of plant milk (1 tsp at a time) until it comes together but make sure you don't over do it to create a sticky consistency.

  1. Rogers Icing Sugar
  2. Plant Milk
  3. Food colouring
  4. Gf/Vegan Sprinkles

Let's Ice

1.  Add 1 cup of icing sugar.
2.  Slowly pour in 1 tbsp of icing sugar at a time and add food colouring if desired.
