These Gluten Free Rhubarb Apple Muffins require few ingredients, create flavourful moist muffins perfect for healthful school lunches and easy snacks. 7 Steps to Gluten Free Rhubarb Apple Muffins
Let's Get Baking
1. In a blender pulse 2 1/2 cups of gluten free oats into a flour-like consistency.
2. Add 1/2 cups of gf oats, baking soda, baking powder into a mixing bowl. Don't stir until you add 1 tsp of lemon juice to allow for the fizz reaction to occur.
3. Sprinkle in the cinnamon powder.
4. Next pour vanilla, maple syrup and applesauce.
5. Gently fold in a shredded apple and 2 cups of frozen rhubarb to muffin batter.
6. Spoon muffin batter into baking tins.
7. Sprinkle brown sugar and cinnamon topping onto each muffin.
These muffins bake at 350 C for 30-35 minutes.
These moist muffins are full of flavour and the cinnamon baking in your oven makes your house smell so good. The density in texture from the gf oats make them extra filling. I prefer them with 1/2 cup of maple syrup while my family likes them extra sweet with 1 cup π. I love having these on hand to put in my kids lunches for a special treat!
