10 Topping Potato Boats

Are you planning a dinner party for your friends and one of them is a vegan?  Perhaps they also need to follow a gluten free diet or other dietary restrictions like no oil?  Yikes!  We can be a hard bunch.  Have no fear, potato boats to the rescue!  My son asked me if they float?  Ummm, maybe?  

Making potato boats is super simple and only require's an oven.  The 10 gf topping ideas can be easily adapted for your individual preferences and require no fancy ingredients that will just end up sitting in your pantry or fridge for months to come.  As long you can eat potatoes this recipe idea can work for everyone.


What You Need

Potatoes

  1. Potatoes 

Let's Get Cooking

1.  Scrub Potatoes down and prick with a fork.
2.  Place the potatoes in oven at 475 degrees for about an hour until soft inside.
3.  Let potatoes cool before cutting them in half lengthwise.

4. Scoop out the insides and place in a mixing bowl.
5.  Use an immersion blender or mash until creamy.  Optional: Add plant milk to help with creaminess.

6.  Place mashed potatoes back inside their shells.  Sprinkle spices if using and cook for an additional 30 mins with oven temperature at 350.

7.  Finally, add toppings of your choice.

Don't Do What I Did...

When I put on my potato toppings, I found some of them don't work well being mixed into the potato mash and tasted better (and looked better) when they were topped after baking.  

If you are using spices like paprika and dill, I recommend sprinkling them on on before the last baking cycle.  For the rest of the toppings, add before serving.

SPECIAL GLUTEN FREE INGREDIENTS

Let's go over some things to look out for in this recipe that may contain gluten:

Wash your roasting pan very well.  If your pan has crusted remnants of old dinners maybe cover it with tin foil to be extra cautious. 

Clean your cutting boards and working area surface.

For the 10 topping ideas most of them are whole foods that do not have cross contamination.  However, double check your labels.  For example, one time I bought frozen mixed vegetables from Walmart and read the label at home.  Yep, you guessed it.  May contain wheat was on the ingredient list!

Make sure the spices you are using come from Club House or McCormick.


Salsa

Tostitos Salsa's are made with natural ingredients without gluten however, this product does have a risk of cross contamination in the factories.  That being said, I have never had a reaction to Tostito salsa.
