This winter loaf recipe is super moist, sweet and has a fluffy texture. I swear it tastes as good as a regular bread (my memory may be a little foggy, it's been over 15 years since I have tasted regular bread HA!). The tartiness of cranberries pairs deliciously with a slight orange zest. YUM! This recipe is doubled (it will make 2 loaves) because my family devours it. It's great making recipes that last long enough to use as a treat for school lunches.😁
Ingredients
- Gf flour (Robinhood all purpose gf flour and maseca flour)
- Salt
- Baking powder
- Baking soda
- Applesauce
- Banana
- Egg replacer
- Plant milk
- Sugar
- Orange zest
- Frozen Cranberries

Let's Get Baking:
1. Combine all the dry ingredients together: flour, baking powder, baking soda and salt.
2. Add in wet ingredients to another bowl: vegan egg replacer, plant milk, banana, sugar and applesauce.
3. Mix the two together and add in a 12 oz package of frozen cranberries (why use 3/4 of the bag when you can throw them all in there right?)
Don't you think the cranberries look pretty? They have such a vibrant colour.
4. Prepare your orange zest. I like to use a peeler and then chop the orange peel into itty bitty pieces. Mix the fragrant zest into your batter.
5. Bake the cranberry orange loaf at 350 for approximately 1 hour. I haven't replaced my loaf pans with silicone so I just line them with parchment paper. It works great when you don't use oil.
