Huckleberry Bannock is an amazing treat to have around the fire. It’s so fun to roast the dough on a stick in the campfire and my kids absolutely love it! Of course my son wanted to perform an experiment with the dough. He really wanted to see how flammable it was? lol.
The original recipe from my Aunt contains wheat flour so if you are a ‘non-celiac’ this recipe could potentially work with regular flour. I also have tried this recipe with Maseca Gluten free Corn Flour and it worked great (for a little extra fibre).
The best thing about Bannock is you can fill it with anything you like: chocolate chips, blueberries, strawberries, nuts, peanut butter to name a few ideas. I make the dough ahead of time and place it in an airtight container. I find it lasts about a week.
Ingredients Needed for Huckleberry Bannock
What Kind of Gluten-Free Flour?
I used Robin Hood All Purpose Gluten Free flour. It’s economical, has great texture and I have the best luck with it rising similar to traditional flour. Next summer I might experiment with gluten free oats.
Let’s Make the Bannock Dough
Measure out 2 cups of gluten free flour into a bowl.
Add in 2 Tsp of baking powder, 1/2 Tsp salt and 1 Tbsp of maple syrup.
Add 1/3 cup applesauce or my quick tip is to just use a pouch. Mix all the ingredients together.
Slowly add in 1 cup of water.
Stir the flour until it starts to come together as a dough. You may need to add additional water (add 1 Tbsp at a time).
Place dough into an airtight container. I find mine lasts about a week in the fridge or cooler.
You’re going to need a campfire or a propane fire pit (we use our’s when fire bans are in effect).
Make a roasting stick with about an 1 inch in diameter.
Make a ball about the size of an apricot and spread it out on your roasting stick. We are making a pocket for our delicious fillings.
Once evenly cooked and golden brown set your bannock aside till it cools slightly before pulling it off.
Look at this cool pocket you can now load up with all of your delicious fillings!
Drizzle on maple syrup.
My 10 year old said, “Huckleberry Bannock tastes like a marshmallow but better!” We have had a hard time with marshmallows in the past causing painful constipation so my son has learned to stay away from them.
