Stewed Rhubarb: Unique Summer Dessert To Cool Down

Nothing brings me back to my childhood more than Stewed Rhubarb. My family has a ‘thing’ with Rhubarb. My great grandfather developed his own strain of Rhubarb in Winnipeg, Canada by grafting rootstocks of McDonald and Strawberry Rhubarb to create ‘Coulter Rhubarb’. When my family moved out west it was very important that we keep Coulter Rhubarb going. I think every house and rental I have ever lived in has some of it planted in the backyard. Ha!

What’s so special about Coulter Rhubarb? Well, the stalks are thinner with more red colour throughout and it has a sweeter taste than other strands. I find this funny because it still has the traditional sour taste so I can’t even imagine what regular Rhubarb tastes like. When I was little we used to make lots of things with Rhubarb; muffins, loaves, cakes, juice, slushies and even just dip the stalks into sugar.

Stewed Rhubarb over ice cream is my absolute favourite. It’s the summer time treat that brings me back to my childhood. So delicious! You must try this recipe. It’s the ultimate summer cool down and I love to pair it with banana ice cream.

How To Make Stewed Rhubarb Dessert?

Ingredients

  1. Maple Syrup
  2. Arrowroot Powder
  3. Cinnamon
  4. Rhubarb
Optional: layer dessert with banana ice cream and chopped pistachios to garnish the top.

Let's Make It

1.  Chop 6 cups of Rhubarb and compost the leaves.

2.  Simmer medium heat.

3.  Add 1 cup of maple syrup.

4.  Optional: add in 1 Tbsp on cinnamon. I love cinnamon!

5.  Make a slurry. Use 1 Tbsp of arrowroot powder and add in 1 Tbsp of water. Mix thoroughly.

Note: If you don’t have arrowroot powder cornstarch or tapioca starch should work fine.

6.  Slowly stir in slurry mixture to the Rhubarb.

7.  Simmer 20-30 minutes until Rhubarb mixture has thickened and become ‘saucy’. Pour into container to be refrigerated and cooled.
