These GF Vegan Carrot Cupcakes will blow your socks off! I love carrots and eat tonnes of them everyday so much so that my hands and feet actually have an orange hue from the beta-carotene. Ha ha! I think they may be my favourite veggie. I really like how rustic they look and I love sneaking vegetables into desserts, especially for my kids. This recipe can be adapted In so many ways:
- You can substitute regular flour in place of the gluten free flour
- Make it into a cake (should fill two 9×9)
- Change the recipe into muffins just skip the icing

I used these silicone heart molds I purchased off Amazon. Not only will your baking not stick for oil-free baking but my kids really love them!
Let's Bake
Make sure you choose a very big bowl and add gluten free flour, baking powder, baking soda and spices.
I also added 1 Tbsp of cinnamon because I absolutely LOVE cinnamon! YUM
You could use another bowl for your wet ingredients but I am seriously lazy when it comes to things in the kitchen. I prefer to use one bowl (then I only have to clean one bowl) Ha! I added my banana using my ‘masher’ tool until it was liquified.
Add in your maple syrup. I really love the smell of maple syrup. I get mine at Costco.
Throw in those grated carrots and raisins! Don’t you love the colour?
I used 2 cups of apple juice and it helps make these cupcakes super moist while adding some sweetness.
Mix everything very throughly and you are ready to pour into your baking mold.
I really dig my silicone heart shaped molds. It’s a fun way to show how your food is made with love. Also perfect for oil-free baking!
Optional Icing
I just made a simple icing with two ingredients. It may not be the healthiest but birthday’s only come around once a year.
Simple Icing
1 cup of icing sugar
1 Tbsp of plant milk
